Here’s an all time favorite.  The Chris Reeve’s knot.  He didn’t invent it, but he does take credit for popularizing it.  It is a know that is used on a hangman’s noose.

Here’s the same knife with a more basic knot.  Just a simple figure 8 knot.  One of the easiest knots to do.  Looks very simple yet classy.
